PEACH COBBLER BITES

One of my favorite things about summer is the fresh fruit. My favorite fruit is watermelon but if you get a sweet juicy peach it rivals it! One of the very first things I learned to make on my own was a peach crisp. I had flour and sugar everywhere! Now I have  changed up my baking habits to healthify everything and I figured out how to make a little peach cobbler bites!

They are pretty simple and taste divine.I topped mine with  cinnamon coconutter sweet spreads! Its a wonderful litter company thats sells amazing coconutter spreads with 6 different flavors. You have to check them out! They will change your life!  www.sweetspreads.com .

I really enjoyed these my husband said they are my best creation yet!

DON'T WAIT TO LOSE WEIGHT CHALLENGE

DON’T WAIT TO LOSE WEIGHT CHALLENGE

Sometimes with weight you feel like you are climbing up an insane mountain but I promise the view from the top when you succeed is worth it all- On top of Camelback in Phoenix Arizona
OK, so some of you have asked for more details on how this going to work. I will be posting videos on how to weight in and weight out for the challenge as June 16th gets closer but I wanted to share more details:

ENTER THE CHALLENGE WITH THE FOLLOWING LINK:
Don't wait to LOSE WEIGHT Challenge

WHERE IS THE MONEY GOING:
No, your 20 dollars does not all go to me!  This is NOT a cash cow for me! I am doing this because I love to help. The amount of time I put in will out weight by far what I will earn but I LOVE fitness , I LOVE my followers, and LOVE to see people get fit and build body confidence!

50% of the money goes back to YOU! Yes that’s right...YOU.  Lose 4% of your weight you win money. That simple! 25 % percent goes to the Meltdown challenge website for hosting and 25 % to me for providing you workouts, meal ideas and fitness info for 30 days! You are paying me ONLY 5 bucks for the entire month to get you jump started. It will be well worth every penny once you’re a few pounds lighter and have more fitness education under your belt to keep going!
HOW IT WORKS:

You pay 20 dollars to Meltdown Challenge through my link listed above plus a service fee for the site. You weight in at the beginning of the challenge (video on how to will be posted closer to start date) and you weight out at the end. If you lose 4 % of your weight you started at you enter the winner's circle. The winner's circle wins 50% of all money put up for the challenge split evenly between winners.

For example: If we have 50 Challenges the winners pot is 500 dollars. If only 10 people lose 4 % than they each win 50 dollars!  WHO DOESN’T WANT TO WIN 50 BUCKS AND LOSE WEIGHT!!

Even if ALL 50 lose the 4 % you still get 10 bucks back and you only put in 20 and you lost weight so its a win win!! So depending how many challengers we have and how many people enter the winner’s circle the amount of money will change and could be a very large amount.  THAT’S why its fun for you to invite friends to challenge with you! Up the Winner Pool amount and do it together!

And even if you don’t want to lose weight but want to tone up that’s ok. I will be providing tons of info that will help you do that. So you may not win money but my services are still at your beckoning call!

WHAT I WILL OFFER FOR HELP:
I will be posting on my challenge wall EVERYDAY.  I will guide you along the challenge with information to help you meet your goal. My posts will vary each day but will include 2-3 workout ideas a week (all home workouts with options for beginners and advanced), 2-3 meals/snacks/dessert ideas each week, jump starting ideas, staying focuses ideas,  eating out guidelines, staying fit on vacation info, products I love and USE that have helped me with weight loss/toning up, meal guidelines, information on carbs/fats/proteins , what to eat and when, and last but not least motivational info!

Plus you can ask any question you have and I will answer it. We will make a little community with our challenge members and keep everyone motivated. IT’S GOING TO BE AWESOME!

OPTIONAL:
This is totally optional but i want you to succeed so a great way to start this challenge is with a cleanse. I am not talking about drinking lemon water for a week! I mean a real one where you still eat healthy foods but it cleans out your liver and intestines. I suggest  this one from MYNT. Its 14 bucks which is super CHEAP for a cleanse. I had two clients try it and they both lost above 5 pounds in the first week. So I  am big fan now and share it with all my clients to jump start them!  You can enter your info and do a one time order of it! I SWEAR ITS WORTH CHECKING OUT. Its all natural made of cranberry extract, milk thistle  and senna extract and it works liek a champ!~

Peanut Butter Chocolate Chip Chewy Bars

PEANUT BUTTER CHOCOLATE CHIP CHEWY BARS

So... I LOVE Peanut butter and when I make a healthy protien packed bar out of it its even better. These are sooooo good. SO SOFT AND CHEWY AND TASTY AND PEANUT BUTTERY! Ok I will stop drooling over here! Plus they are Gluten and dairy free. They are the best no bake protein bars! I dont even like to call them a protein bar because I have been breaking them apart and putting them on my ice cream as a desserts (HALO Ice cream..google it . Its awesome!)

In the summer it get REALLY HOT in Arizona. We are alwats in the 100's so i want treats but dont want to use my oven! These are perfect! All i need is a good food processor! Hope you guys enjoy them as much as I do!

Ingredients:
2 cups Peanut Butter protein Powder
(I used Try About Time peanut butter protein: link to order is at the bottom of post) OR Vanilla Protein
1 cup Almond Flour
1 tsp vanilla
1/4 tsp salt
1/3 C peanut butter of choice (I used Peanut butter Co White chocolate wonderful)
17-20 drops sweef leaf stevia or 2-3 packets of stevia
3 tbs maple syrup or honey (I used walden farms)
5 tbs water
Optional but nessecary: 16-18 ghirdeilli's milk chocolate chips chopped in half or mini chocolate chips

HERE IS THE DEAL:
Combine protein powder, almond flour, vanilla, salt, peanut butter, and stevia. Add in 1 tbs of water and 1 and 1 tbs maple syrup at a time and mix. Continue to add and mix until the alotted amount is used. This is to ensure it mixes well because the dough can become very dense in the end.

Once everything is well combined and the dough is formed  press into an 8X8 pan covered  in tin foil and sprayed (foil needs to cover the sides enough to pull out later for cutting ) Add chocolate chips by pushing them in the top of the dough ( you can mix them in but I like them this way  because seem to use less)

Let set for at least an hour. You don't  have to do this I just feel like the flavors mesh better and the bars form better for cutting if I wait but it is not a must. I normally make mine and leave them over night and cut them in the morning.Cut with sharp knife . Store on Baggie or Tupperware

TIP: I love freezing mine and pulling out one to microwave for 15ish second to eat warm and a little gooey!

Strawberry Banana Trifle

Strawberry Banana Trifle

This is a GREAT dessert for any spring or summer gathering.  A GIANT Strawberry Banana Trifle!! Its light and fluffy and tastes so refreshing when it gets really hot outside! Its feeds at least 10-12 people easily and probably more! Now I will be honest its not totally clean BUT I believe in moderation especially on holidays and on a scale of good better best concerning health this is a better option then most!!  BUT I will also give you a cleaner version that does not use the cake mix! So now you have TWO options to decide how you want to make your yummy cake

Its super simple to make but looks fancy. I got the dish from walmart I think for like ten bucks and it was worth every dime.

Layer one CAKE:(Option 1)
1 white cake mix
2 light raspberry or strawberry yogurts of choice
4 eggs whites
1 &1/4 c water
Mix together and bake cake based in instructions on the box

Layer one CAKE : (Option 2)
2 Can white beans
2 strawberry flavor Greek yogurt
8 egg whites
1 tsp vanilla creme stevia
12 -14 packets stevia
1 tsp vanilla extract
Then add
2/3 c coconut flour
1/2 tsp salt
1 tsp baking soda
1.5 tsp baking powder

Bake at 350 for about 28-32 ish minutes. I check my cakes alot because based on elevation the bake time changes. Take a tooth pick and poke a hole in the middle if it comes out clean its done.

Pudding Layer:
One sugar free fat free white chocolate or vanilla pudding mix
2 cups milk( so I tried to use almond milk first and it didn't. Who know almond milk wouldn't make pudding but it doesn't ! So you can use skim milk)

Raspberry Fluff layer
1.5 cup of 1% cottage cheese
2 raspberry yogurts of choice
8-10 drops of vanilla stevia or a packet or two stevia measure based on your taste buds
1/4-1/2 tsp xanthan gum (its a thickener so its optional but makes the fluff thicker )

Layer in cake , pudding , bananas and strawberries,  raspberry fluff, cake ,pudding , strawberries and bananas, raspberry fluff and  top with fruits - optional you can add a layer of fat free cool whip and then top with fruit.

Peppered Honey Dijon Salmon

HONEY DIJON SALMON

This was my lunch today and it took 5 min to make! I work full time and have my baby twin girls so I don't have time to make big meals so this was perfect, fast, clean, and protein packed. Its smoked salmon and it comes in a package. I love it! I have to simplify! Thats basically why this post is even short! LOL. Plus I want to show you can eat healthy without having to take a ton of time. I always hear people say " oh I dont have time to eat healthy" NOT TRUE.  Real issue: eating healthy is not a priority! You can eat healthy if fast if you buy the right things!

So here is a simple meal. For the veggies I just put them in the George Forman grill for a few minutes until they are cooked. Then I salt and pepper them after!  The salmon you literally unwrap and throw it on top. Its the peppered one. LITERALLY takes 5 minutes!

And here is the rest of the ingredients:

Spinach
Grape tomatoes
Asparagus
Chopped zucchini
One peppered salmon filet  (pictured below)
Optional: chopped avocado

Dressing:
1/2 tbs(1.5 tsp)  Dijon mustard
1/2 tbs(1.5tsp) lemon juice
1 tsp honey
Mix well and pour over salad

This is the package of Peppered Salmon I used. They have different kinds cajun regular etc. Costco carries them and lots of grocery stores.
