Peanut Butter Chocolate Chip Chewy Bars


PEANUT BUTTER CHOCOLATE CHIP CHEWY BARS


So... I LOVE Peanut butter and when I make a healthy protien packed bar out of it its even better. These are sooooo good. SO SOFT AND CHEWY AND TASTY AND PEANUT BUTTERY! Ok I will stop drooling over here! Plus they are Gluten and dairy free. They are the best no bake protein bars! I dont even like to call them a protein bar because I have been breaking them apart and putting them on my ice cream as a desserts (HALO Ice cream..google it . Its awesome!)

In the summer it get REALLY HOT in Arizona. We are alwats in the 100's so i want treats but dont want to use my oven! These are perfect! All i need is a good food processor! Hope you guys enjoy them as much as I do!

Ingredients:
2 cups Peanut Butter protein Powder
 (I used Try About Time peanut butter protein: link to order is at the bottom of post) OR Vanilla Protein
1 cup Almond Flour 
1 tsp vanilla
1/4 tsp salt
1/3 C peanut butter of choice (I used Peanut butter Co White chocolate wonderful)
 17-20 drops sweef leaf stevia or 2-3 packets of stevia
3 tbs maple syrup or honey (I used walden farms)
5 tbs water
Optional but nessecary: 16-18 ghirdeilli's milk chocolate chips chopped in half or mini chocolate chips


HERE IS THE DEAL:
Combine protein powder, almond flour, vanilla, salt, peanut butter, and stevia. Add in 1 tbs of water and 1 and 1 tbs maple syrup at a time and mix. Continue to add and mix until the alotted amount is used. This is to ensure it mixes well because the dough can become very dense in the end. 

Once everything is well combined and the dough is formed  press into an 8X8 pan covered  in tin foil and sprayed (foil needs to cover the sides enough to pull out later for cutting ) Add chocolate chips by pushing them in the top of the dough ( you can mix them in but I like them this way  because seem to use less)


Let set for at least an hour. You don't  have to do this I just feel like the flavors mesh better and the bars form better for cutting if I wait but it is not a must. I normally make mine and leave them over night and cut them in the morning.Cut with sharp knife . Store on Baggie or Tupperware

TIP: I love freezing mine and pulling out one to microwave for 15ish second to eat warm and a little gooey!
