Cinnamon Berry Pie for One

I have a large sweet tooth.. Like probably the size of a dinosaurs so I always want a treat! So I came up with this little Cinnamon Berry Pie for one! Yes one person! All yours ! Back off people... family, friends....this is an "I am not sharing kind of thing!"


1 cinnamon roll quest bar
1/4 cup raspberries
1/4 cup blackberries

 Microwave bar for 15 second cut off 1/5 of the bar and set aside. Flatten the rest into a small baking dish. Add berries( I chopped mine and put then in but you could mash them and add a little stevia if needed) Then I rolled the 1/5 of the bar into long strings and topped the pie.
Top with a shake or two of cinnamon 
Bake 350 for 8-10 minutes 


NOW Lets talk TOPPING options: 

You have three options and calories for each shown
You can double them up as well.  I am not perfect so my toppings could be considered a little guilty but I don't care. 

1st option:( 30 calories 5.25 protein)
3 tbs cottage cheese
6 drop berry flavored stevia
1/2 tbs almond milk
Pinch of xanthan (optional)

2nd option: (30 calories)
2 tbs fat free cool whip
4 drops berry flavored stevia

3rd option: (80-150 calories depending on brand and amount) 1/3-1/2 cup light vanilla bean ice cream or your on homemade version
( I am in LOVE with desserts that do the hot cold thing! So I am guilty adding this halfway through)

Biscoff Cookie Dough



I LOVE BISCOFF.  When i first found it I ordered a jar and let my sister try it. That valentines days she sent us all jars as little gifts. I may or may not have hid mine from my husband...opps. Anyway now it can be found at any grocery store. Go get some you will not regret it! Its like glorified  peanut butter with a cinnamon twist. This biscoff cookie dough is awesome. It taste so good and is totally healthy. 




1 can chick peas (Garbanzo beans) 
1 scoop vanilla protein
1/3 c biscoff 
3 tbs walden farms maple syrup ( a low sugar or Sugar free works)
2 packets stevia
1/4  and 1/8 tsp cinnamon 
1/8 tsp ground cardamom (this really gives it good flavor its a MUST)
1/2 tsp salt
1/2 tsp butter extract 
1 tsp vanilla 




Blend everything together in a VERY WELL in GOOD food processor. You do not want little bits of chick peas left in.  Thats it. ENJOY!

Green Eggs & Ham No-Muffin Cups



Green Eggs and Ham No-Muffin Cups

Ok maybe these are not the green eggs and ham Dr Seuss was talking about but he would have if he had tried these!! All the veggies are green plus eggs abd ham!! Can I say simple simple simple!!! You could make these a head and have awesome foodprep and reheat them all week. They are high protein low carb and scrumptious!! 





Serves 2-3 people...depending how much you eat! 
2 egg
6 eggs whites
10 pieces of Canadian bacon 
2 Handful and ripped spinach
10-16 green onions chopped
4 tbs reduced fat cheddar (I use 75% less fat  cabot)
Salt and pepper to taste.
Optional: 3-4 tbs green chillies( I made some with and some without and I liked them both)




 Spray muffin tin and place a piece of Canadian bacon in the bottom of each tin so they create little cups

Mix all other ingredients together and fill each tin with the egg mixture! Optional top with a few sprinkles of cheese. 

Bake at 375 for 13 mintues or until top of egg is firm. Enjoy your breakfast! I know I sure did!!

CHICKEN BACON BRUSSEL STIR-FRY

This is an easy dinner you can throw together pretty quickly but feels like you spent a lot more time making. It has a really great flavor and I use canned chicken to make it even faster ! I hated these little tree looking veggies as a kid and now I love them. I only had them steamed with butter as a kid which is probably why I hated them but sauteed with lemon juice, garlic, chicken and turkey bacon.... now we are talking!

 2 cups Brussel sprout Sauté with salt pepper to taste
 1-2 tsp minced garlic. 
 Lemon juice ( half a small lemon of a few squirts from the bottled kind)
1 large can of chicken
2-3 slices  cookedTurkey bacon
salt and pepper to taste
Top 2 tbsp of Romano shredded cheese (mine is 20 calories 1.5g fat per tablespoon) Look at your food labels in the deli section. Most stores carry a little one.


Sauté brussel sprout with salt and pepper sprouts in Medium for 6-8 until almost soft and edges are a bit charred.  Add minced garlic to brussel sprouts  then a 4 or so squirts of lemon juice and reduce heat.  At the same time cook in a medium sauce pan a large can of chicken on medium with salt and pepper for 2-3 minutes. Combine chicken with brussel sprouts on low and add cooked bacon. Remove from heat and top with 2-3 tbsp of Romano shredded cheese. I actually like to mix my cheese in! Yum yum yum!
