Chicken Bacon Avocado Salad Open Faced Sandwich








Chicken Bacon Avocado Salad Open Faced Sandwich 

This is  a family fav for my hubby and I.  I make it  open faced simply because it will take me longer to scarf it down so that gives me more time to enjoy!  I feel like i am having two sandwiches! My husband makes his like a normal sandwich. 

1/2 cup  Pan seared or grilled chicken chopped -salt and pepper to taste
1/3 cup grape tomatoes cut in thirds
1 slice turkey bacon- chopped
1 tablespoon Greek yogurt
 1 tablespoon LOW-FAT mayo NOT light (The kind that I use is only 15 cal - 1 g of fat. Kraft makes one )
Pinch of salt pepper and Stevia 
A few pieces of lettuce
1/5 ish of an avocado just  enough to  spread over a slice or 2 of bread.
1 or  2 slices of bread-  look for a healthy local  Non-processed bread or Eziekel bread.

Mix chicken ,Greek yogurt, mayo Together with salt , pepper and pinch of Stevia. Add in chopped tomatoes and chopped  turkey bacon. Toast bread and smooth avocado on top as if it were butter. Top bread and avocado with lettuce and then chicken salad mixture. I will normally sprinkle with pepper on top as well. You can also eat over a bed of lettuce  and forget the bread for a lowcarb option!

CHICKEN BACON BRUSSEL STIR-FRY

This is an easy dinner you can throw together pretty quickly but feels like you spent a lot more time making. It has a really great flavor and I use canned chicken to make it even faster ! I hated these little tree looking veggies as a kid and now I love them. I only had them steamed with butter as a kid which is probably why I hated them but sauteed with lemon juice, garlic, chicken and turkey bacon.... now we are talking!

 2 cups Brussel sprout Sauté with salt pepper to taste
 1-2 tsp minced garlic. 
 Lemon juice ( half a small lemon of a few squirts from the bottled kind)
1 large can of chicken
2-3 slices  cookedTurkey bacon
salt and pepper to taste
Top 2 tbsp of Romano shredded cheese (mine is 20 calories 1.5g fat per tablespoon) Look at your food labels in the deli section. Most stores carry a little one.


Sauté brussel sprout with salt and pepper sprouts in Medium for 6-8 until almost soft and edges are a bit charred.  Add minced garlic to brussel sprouts  then a 4 or so squirts of lemon juice and reduce heat.  At the same time cook in a medium sauce pan a large can of chicken on medium with salt and pepper for 2-3 minutes. Combine chicken with brussel sprouts on low and add cooked bacon. Remove from heat and top with 2-3 tbsp of Romano shredded cheese. I actually like to mix my cheese in! Yum yum yum!

Taco Salad



I love Mexican food but I can't have my plate covered in cheese tortillas refried beans and sour cream! So I make this yummy meal.  Not much of a recipe needed accept for the chicken.

Cook 4-6 chicken breast with salsa of choice and a taco seasoning packet in a crockpot for 4-5 hours on low. Shred with hand mixer once cooked (Food prep is HUGE for eating healthy so make extra put it in serving size baggies and freeze for fast meals) 

Lettuce,mini peppers yellow orange and red ,avocado, tomatoes,dollops of Greek yogurt, salsa , black beans drained, and yummy shredded chicken taco meat!Whala... TACO SALAD!

Its pretty Simple and fast if you food prep the chicken

Chicken Ceasar Salad Sandwich
For the  chicken I make a whole crockpot and then separate into little bags and freeze for  a quick easy lunch. I got the originally recipe off rachelshultz.com but modified it to make it healthy!

4-5 chicken breasts 
Caesar dressing mix packet
1/2 cup almond or low fat milk (optional)
1/2 cup Greek yogurt (optional)
Trader Joe's medium-size whole-wheat pitas 100 calories each
A few chopped grape tomatoes
Handful of spinach 

Cook Chicken breast in a crockpot  for 4ish  hours on low.Drain crock pot and shred chicken(its fast with a hand mixer)
Mix Caesar packet with 1/3 cup milk 1/3 cup Greek yogurt in a separate bowl. (You can also not add the milk and yogurt if you want less calories  and just season the meat with the packet) 
Pour caeser mixture over chicken in crockpot @ mix together -Keep on low another 30 min. 

Eat on Pita or a High fiber low carb tortilla with tomatoes and spinach or as a salad
