My sweet tooth is coming out larger then life the past few days!!   I need to get it in check and this little treat is perfect for that! And when i found the kettle corn seaosning (picture below) I know i had to make up something yummy with it. This is easy all you have to do is layer it all in and your good to go straight it heaven😇... Then when its gone you will be VERY very sad. ENJOY!

Blend in food processor:
2/3 cup cottage cheese
1.5 -2 tsp kettle corn season(that's right it's unreal and in the popcorn isle I have seen it at walmart and others normal grocery stores its 5 calories for  1/2 tsp)
10 ish drop vanilla creme stevia
1/4 xanthan gum ( you can omit but it is an awesome thickener makes the parfait more fluffy!) Once this is all mixed put in in the Freezer while you finish everything else. Makes it more icecream like.
Topping prep:
Microwave 1/2 a cinnamon roll #questbar for 8 seconds ( you can of course use a whole one). Break and roll with your fingers into little balls and bake at 350 for 3-4 min.
1/2 small banana chopped
One or two handfuls of plain popcorn
2 tsp walden farms caramel syrup or sugar free caramel sauce
And top with a few shakes of the kettle corn seasoning

Cinnamon Berry Pie for One!

Cinnamon Berry Pie for One

I have a large sweet tooth.. Like probably the size of a dinosaurs so I always want a treat! So I came up with this little Cinnamon Berry Pie for one! Yes one person! All yours ! Back off people... family, friends....this is an "I am not sharing kind of thing!"

1 cinnamon roll quest bar
1/4 cup raspberries
1/4 cup blackberries

Microwave bar for 15 second cut off 1/5 of the bar and set aside. Flatten the rest into a small baking dish. Add berries( I chopped mine and put then in but you could mash them and add a little stevia if needed) Then I rolled the 1/5 of the bar into long strings and topped the pie.
Top with a shake or two of cinnamon
Bake 350 for 8-10 minutes

NOW Lets talk TOPPING options:

You have three options and calories for each shown
You can double them up as well.  I am not perfect so my toppings could be considered a little guilty but I don't care.

1st option:( 30 calories 5.25 protein)
3 tbs cottage cheese
6 drop berry flavored stevia
1/2 tbs almond milk
Pinch of xanthan (optional)

2nd option: (30 calories)
2 tbs fat free cool whip
4 drops berry flavored stevia

3rd option: (80-150 calories depending on brand and amount) 1/3-1/2 cup light vanilla bean ice cream or your on homemade version
( I am in LOVE with desserts that do the hot cold thing! So I am guilty adding this halfway through)

ENJOY !!

Blueberry Lemon Pie for One

1 love quest bars AND I love pie. So what could be better then combining them! Quest bars are amazing and you can make so many things out of them! Using a quest bar to make a pie crust turned out awesome and was a REALLY clean and protein packed treat!
1 almond crunch quest bar
2-3 tsp vanilla protein
1/3-1/2 cup blueberries
Topping:
2 tsp vanilla protein
1 tsp lemon sugar free  pudding mix
Adjust to your taste !

Microwave the almond bar 15 seconds until soft and roll out with a rolling pin as flat as possible on parchment paper. Slice a few thin strips off for the top and place in a baking dish. Mash #blueberries and mix in vanilla protein powder. Pour over top the almond crust . Place the thin strips over top to look like a pie. Bake at 350 for 8-10 minutes until edges are slightly golden but still soft.

Mix topping of vanilla protein and #lemon sugar free pudding with a little water to get a thin consistency you can drizzle over top your pie with a fork! Its AMAZING I ate mine for lunch!!!!
